Prof. Michael von Massow, Hospitality, Food and Tourism Management, was interviewed by CBC Radio’s The 180. He also wrote an op-ed in the Globe and Mail April 29. In the radio interview, he discussed the trend of some restaurants to end tipping. In the op-ed article, von Massow wrote about the move by the restaurant chain, Earl’s, to shift to U.S. beef to meet customer concerns about animal welfare. Von Massow studies food value chains and revenue management in the hospitality industry.
