Dr. Bruce McAdams

Restaurant industry researcher Dr. Bruce McAdams, a professor in the Department of Hospitality, Food and Tourism Management (HFTM), spoke to CBC Radio’s Ontario Today about the ongoing debate around tipping in restaurants.

McAdams, who has researched the issue of tipping for more than a decade, discussed the pros and cons of tipping as well as his concerns about how tipping can perpetuate social inequities and create mental stress for servers and co-workers.

McAdams researches sustainable employment models in food service and founded the University of Guelph Sustainable Restaurant Project (UGSRP), which supports both faculty and student research in areas of restaurant sustainability.
